Egg With Methi
Ingredients:
4 Eggs
1 Medium Size Red Onion (Thin slice)
2 Small Thai Chile (chopped)
¼ Tsp of Jeera (Cumming)
¼ Tsp Haldi (Turmeric)
½ Tsp Salt
½ Cup Chop Methi (Fenugreek)
1 Tsp spoon of butter
Warm the butter add Jeera for few seconds then add the onions and after few minutes add Methi and Chile. Sauté the onions until slightly brown add Turmeri and Salt cook for few seconds and add the eggs cook for few minutes steer till cook.

Sam's Home Style Egg Roll
Ingredients:

1. A pack of egg roll wraps (recommend Spring Home Brand)
2. 1/4 lb ground chicken
3. 2 cups medium chopped cabbage
4. 2 cups bean sprouts
5. 2 cups medium chopped jicama
6. 1 tbs fine chopped cilantro
7. 1 tbs fine chopped ginger
8. 1 tbs fine chopped green onion
9. 2 tbsp soy sauce
10. 1/2 tsp fish sauce (optional)
11. 1 tbsp oyster sauce
12. 1 tsp sugar (optional)
13. 1/2 tsp black pepper
14. Salt - bring to taste (optional)
15. 2 eggs
16. 1 cup chopped vermicelli

First, soak the vermicelli into hot water for 2 minutes, drain the vermicelli and cut them into to a length of 2 inches.

Secondly, mix vermicelli with the ingredients in a big bowl, add two eggs into the bowl and mix it real good. You also need an additional egg, crack it and keep in a small bowl by the side.

Peel off the wrapper, lay on a plate, fill-in about 2 scoops of a tablespoon of the mix onto the meddle of wrapper and start to roll forward to a halfway then fold both right and left edges in, make sure you have the mix tight enough, continue to roll until completed then brush the triagular edge with eggyork and seal it good.

Prepare a deep pan with two cups of vegetavle oil, once you finish wrapping all the mix then drop wrapped-eggrolls into the hot oil. Don't put too many in the pan. Cooking time is 2-3 minutes only. As soon as the eggrolls are floating on the surface, it indicates that they are cooked.

Eggroll Sauce:
2 tbsp peanut butter
1 tsp fine chopped green onion
1 tbsp chopped green Thai chilli peppers (fresh)
1 tsp soy sauce
1 tsp sugar
1/2 cup water

Pour water into a small pot, bring it to broil, add the ingredients into the pot and stir it real good, add salt bringing to a good taste.

This recipe is serving 6 people.

Bitter melon
appetizer and snack
Ingredients:
1. Bitter melon
2. Salt or chili sauce
Preparing:
1. Cut the bitter melon in half
2. Scoop the seeds out with a spoon
3. Cut the bitter melon into sticks like french-fries
4. Dip it into the salt or chilli sauce and eat it.

Scramble Egg with Bitter Melon

Ingridients:
1. A whole bitter melon (small size, 2 to 3 inch long)
2. 1 egg
3. 2 tbsp any preference oil
4. ¼ tsp salt

Preparing:
1. Cut the bitter melon in half
2. Scoop seeds with a spoon
3. Cross slice the bitter melon into thin pieces
4. Heat the oil until hot
5. Pour the bitter melon in and stir until cook ( turn solf)
6. Add eggs into the bitter melon
7. Stir until good mix and cooked and ready for serving


Refresher

Ingridients:
1. 1 or 2 moqua, opo, singqua, moap, or any of your favorite vegetables
2. A quart of water
3. Using a pot that water only fill up to half of the pot

Preparing:
1. Pour water into the pot
2. Set the pot on stove
3. Set the stove on high
4. Chop the vegetable(s) to your preference size
5. Pour vegetable(s) into the water
6. Let it boil until vegetable(s) turn soft and it is ready to serve.


Soup

Ingridients:
1. 1 or 2 moqua, opo, singqua, moap, or beans or any of your preference vegetables
2. 1 quart of water
3. Pour water to hafl way full
4. 3 – 5 oz of beef, chicken, or pork
5. ½ tsp salt

Preparing:
1. Cut the vegetable to any preference size
2. Heat the water to boiling point
3. Add meat into the boiling water
4. Add salt in and bring it to a taste
5. Add vegetable(s)in when the meat is cooked
6. Let it boil until vegetable(s) turn soft.
It is ready for serving
